For many, chocolate inspires passion – for us, it is our passion for chocolate that inspires. At sugar dreams, Colleen and Jay aim to use only the most fresh and natural ingredients as they strive to constantly create new flavours for your chocolate bon-bons or pralines. They’ve spent a lot of time learning the science behind the chocolate and the fillings so that you only have to enjoy the pure pleasure of the treat as it melts on your tongue. Or if you are looking for a different sensation how about trying the savoury chocolates that we are creating to give your tongue that unexpected pleasure when it comes to your favourite treat. Chocolate Ingredients We are like you – we love chocolate, but we want it to be the healthiest treat possible. That is why at Sugar Dreams we try to use mostly fresh, and local products where-ever possible. We use hand picked Lowry strawberries from Southern Alberta, fresh BC cherries, even beets, tomatoes, basil and oregano along with other herbs that Jay grows in his own garden to bring out the best and exciting flavours from the chocolate. And we don’t just use any chocolate – only Belgian couverture chocolate. What is Couverture? When it comes to chocolate couverture is the highest of quality. The different flavour profiles you experience are a result of the ratio of chocolate solids mixed with cocoa butter and how those components are married together. Check our chocolate school section for more. Needless to say we use only the long established fine Belgian chocolate lines such as Lindt and Callebaut to cover our fillings.
